Delicious Carrot Cake

I don't think this is very fattening, the fact that it is being made by vegetables which is the carrots. Though you put sugar in it, but not as much as other cakes like Chocolate Cakes, those other cakes which purely carbohydrates and sugar. This is one that I bake every Sunday here too...

Things You’ll Need:

  • 4 eggs
  • 2 cups white sugar
  • 3 (4 ounce) jars carrot baby food
  • 1 teaspoon vanilla extract
  • 1 1/2 cups vegetable oil
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 cup chopped walnuts
  • 1 cup raisins

Procedure:

Stir together the eggs, sugar, carrots, vanilla and oil. Combine the flour, baking soda, cinnamon and salt, stir into the carrot mixture. Fold in the nuts and raisins. Pour into the prepared pan.

Preheat oven to 350 degrees F. Flour and Grease a pan (preferably 9 x 13 inches).

Bake for 45-50 minutes.

When the cake has cooled, frost with cream cheese frosting.
